We have Source as Exadata so our option is to RMAN sync to Delphix using NAS/NFS and once sync is done we can provision VDB to Exadata as the target... does that sound right?

Yes. Delphix intern uses RMAN backup to igest data to Delphix dSource. Once the dSource is added on Delphix then you can provision a VDB on Exadata Target using NFS as a protocol which will be taken care by Delphix.You need to make sure you open required ports and user permissions.
