Hi Giorgio,
VDB's are very much similar to any Physical Databases. The tools one uses to work with Physical database should work seamlessly with VDB's too, including Informatica. There are couple of good white papers published by Informatica,

that provides more details.
If Latency issues comes up with respect to CDC configured against a VDB, you may want to look into the frequency of Snapsync/Logsync configured.
