To provide some further information beyond what was already provided by my colleagues, you may want to refer to the Fixed Issues section of our documentation
For each release you will see a Fixes that take effect after upgrading and rebooting and Fixes that take effect immediately after upgrading section.
Only if you are affected by a bug listed in the Fixes that take effect after upgrading and rebooting section do you need to carry out the reboot/Apply Now upgrade.
As Newton and Michael have already suggested, if not you can continue using the Delay the Reboot option indefinitely

Probably an obvious question, but, if an upgrade is run with the "delay the reboot" option, is it required to manually reboot the Delphix engine before doing the next upgrade?
